Exercise Caution When Frying A Turkey

The Wichita Fire Department (WFD) discourages the use of outdoor gas-fueled turkey fryers, which immerse the turkey in a substantial quantity of cooking oil at high temperatures. The products currently available for home pose significant dangers during the cooking process.

A turkey partially wet or completely wet, immersed in hot oil can produce a volatile reaction. The oil can come in contact with flames and cause a fire.

WFD recommends the following precautions if you fry a turkey:

  • Keep children away from the cooking area.

  • Do not fry the turkey on a combustible surface such as a deck or inside a garage.

  • Avoid leaning directly over the hot pot.

  • Wear gloves and other protective clothing.

The department also suggests using an infrared, oil-less turkey fryer as an alternative to the hot oil fryer.
